Mesquite flour, also known as mesquite meal or algarroba, is prepared by collecting bean pods from mesquite tree, and subsequently drying, grinding, and milling them into flour. Mesquite flour is rich in proteins, amino acid lysine, and has low glycemic index. In addition, it contains other nutrients, which include calcium, magnesium, potassium, iron, and zinc. This flour is used to prepare many food items, including tortillas, breads, pancakes, muffins, cookies, refreshing drinks, mesquite chocolates, candy, chips, and breakfast cereals to give a nutritious seasoning, light natural sweetness, and cinnamon-mocha-coconut aroma or nutty flavor to them.
